Method:

  1. Prepare the Greens:
    • Clean and wash haak leaves thoroughly. Chop them finely along with spinach.
    • Boil water in a pot and blanch the chopped haak and spinach for 5 minutes. Drain and set aside.
  2. Prepare the Vegetables:
    • In a separate pan, heat mustard oil until it starts to smoke. Reduce the heat and add asafoetida, cumin seeds, cardamom pods, cloves, and cinnamon stick.
    • Add diced turnips and potatoes. Sauté until the vegetables are lightly browned.

    • Add the blanched haak and spinach to the pan with vegetables. Mix well.
    • In a bowl, beat the yogurt and add it to the pan. Stir continuously to avoid curdling.

    • Add grated ginger, fennel powder, dry ginger powder, red chili powder, and salt to taste. Mix thoroughly.
  5. Dum Cooking:
    • Cover the pan with a tight-fitting lid. Allow the dish to cook on low heat (dum) for 30-40 minutes, ensuring the flavors meld together.
