Dubke Recipe: A Hearty Indian Lentil Curry

Dubke is a North Indian lentil curry made with a combination of lentils, usually arhar dal (split pigeon peas), and an assortment of spices. It’s a flavorful and hearty dish often served with rice or Indian bread. Here’s how to make Dubke:

Ingredients:

  • 1 cup arhar dal (split pigeon peas)
  • 1/4 cup chana dal (split chickpea lentils)
  • 1/4 cup moong dal (split yellow gram lentils)
  • 1 large onion, finely chopped
  • 2-3 tomatoes, chopped
  • 2-3 green chilies, slit (adjust to taste)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 2-3 dry red chilies
  • 1/2 teaspoon asafoetida (hing)
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 2 tablespoons ghee or oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing the Lentils:

  1. Rinse arhar dal, chana dal, and moong dal together under cold running water until the water runs clear.
  2. Combine the dals in a pressure cooker. Add turmeric powder and salt.
  3. Add enough water to cover the dals (approximately 3-4 cups of water).
  4. Pressure cook the lentils on medium heat for about 3-4 whistles or until they are soft and cooked through. Allow the pressure to release naturally.
  5. Once the pressure is released, open the cooker and mash the lentils lightly with the back of a spoon. Set aside.

2. Cooking the Curry:

  1. In a deep pan or kadai, heat ghee or oil over medium heat.
  2. Add cumin seeds, mustard seeds, and dry red chilies. Let them splutter.
  3. Add asafoetida (hing) and sauté for a few seconds.
  4. Stir in the chopped onions and sauté until they turn golden brown.
  5. Add ginger-garlic paste and slit green chilies. Sauté for a minute until aromatic.
  6. Add chopped tomatoes and cook until they turn soft and mushy.
  7. Mix in the garam masala, coriander powder, and red chili powder. Cook for 2-3 minutes.
  8. Add the mashed lentils to the pan and mix well with the spice mixture.
  9. Adjust the consistency by adding water to achieve the desired thickness. Bring the mixture to a gentle simmer.

3. Serving:

  1. Serve hot Dubke garnished with fresh coriander leaves.
  2. Enjoy Dubke with steamed rice or Indian bread like roti, paratha, or naan.

  • Customize the spiciness of the curry by adjusting the amount of green chilies and red chili powder.
