- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Preparing the Dhoka (Lentil Cakes):
- Wash and soak the chana dal in enough water for 4-5 hours.
- Drain the soaked dal and grind it into a smooth paste along with chopped green chilies, ginger paste, turmeric powder, salt, and sugar. Use minimal water, if needed.
- In a non-stick pan, heat 2 tablespoons of vegetable oil. Add a pinch of asafoetida (hing).
- Add the dal paste to the pan and cook it on low heat, stirring continuously.
- Cook until the mixture thickens, comes together, and leaves the sides of the pan. This will take about 10-15 minutes.
- Grease a flat plate or tray and transfer the cooked dal mixture onto it. Spread it evenly and allow it to cool and set for about an hour.
- Once set, cut the dal mixture into small diamond or square-shaped pieces (dhoka).
2. Cooking the Dhokar Dalna:
- Heat 2 tablespoons of mustard oil (or any vegetable oil) in a deep pan or kadai.
- Add cumin seeds, bay leaves, and dried red chilies. Sauté for a few seconds until they release their aroma.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in minced garlic and grated ginger. Sauté for another 2-3 minutes until the raw aroma disappears.
- Add finely chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.
- Add turmeric powder, cumin powder, coriander powder, red chili powder, garam masala, and salt. Mix well to create a flavorful base.
- Add about 2 cups of water and let the gravy simmer for 5-7 minutes.
3. Adding the Dhoka:
- Carefully add the prepared lentil cakes (dhoka) to the simmering gravy.
- Simmer for another 10-15 minutes, allowing the dhoka to soak in the flavors of the gravy.
- Adjust the consistency of the gravy by adding more water if needed.
4. Garnishing and Serving:
- Garnish Dhokar Dalna with fresh coriander leaves.
- Serve it hot with steamed rice.
