  • 1 tablespoon oil

  3. Add chopped tomatoes, turmeric powder, and red chili powder. Cook until the tomatoes become soft and the oil separates.
  4. Add chopped amaranth leaves and sauté until they wilt.
  5. Pour in the tamarind extract, add salt, and bring the mixture to a boil.
  6. Reduce the heat, cover the pan, and let it simmer for 15-20 minutes until the flavors meld.
  7. Garnish with curry leaves and serve hot with steamed rice or chapati.
