  • 1/2 cup masoor dal (red lentils)
  • 1 small lemon-sized tamarind ball, soaked in water
  • 2 medium-sized tomatoes, chopped
  • 1 large onion, finely chopped
  • 2 green chilies, slit
  • 1 sprig curry leaves
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  1. Prepare Lentils:
    • Rinse the toor dal and masoor dal under running water.
    • Pressure cook the dals with turmeric powder and salt until soft and mushy.
  2. Tamarind Extract:
    • Soak the tamarind in warm water and extract its pulp. Set aside.
  3. Cooking Amti:
    • Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add chopped onions and green chilies. Saute until onions turn golden brown.
    • Add curry leaves, chopped tomatoes, red chili powder, and coriander powder. Cook until tomatoes are soft.
  4. Combine Ingredients:
    • Add the tamarind extract to the cooked dal. Mix well.
    • Combine the dal-tamarind mixture with the sautéed onion-tomato mixture. Add garam masala and adjust salt.
  5. Simmer:
    • Let the Amti simmer for 10-15 minutes on low heat, allowing the flavors to meld.
  6. Tempering:
    • In a separate small pan, heat a little oil and add mustard seeds. Once they splutter, pour the tempering over the Amti.
  7. Garnish and Serve:
    • Garnish with fresh coriander leaves and serve hot with steamed rice or Indian bread of your choice.
