Ingredients

  • 2 medium bitter gourds (karela), finely chopped
  • 2 cups whole wheat flour (atta)
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon garam masala powder
  • 1/4 teaspoon cumin seeds (jeera)
  • 1/4 teaspoon coriander powder (dhania)
  • 1/4 teaspoon turmeric powder (haldi)
  • 1/4 teaspoon red chili powder (optional)
  • 2 tablespoons ghee or oil
  • 1/2 cup lukewarm water
  • Chopped fresh coriander (cilantro) for garnish
  • Lemon wedges for serving (optional)

Method

  1. Squeeze out as much water as possible from the chopped bitter gourd using a cheesecloth or a fine mesh sieve. This step is crucial to remove excess bitterness.
  2. In a large mixing bowl, combine the whole wheat flour, salt, baking powder, garam masala powder, cumin seeds, coriander powder, turmeric powder, and red chili powder (if using).
  3. Add the squeezed bitter gourd to the flour mixture and mix well.
  4. Add the ghee or oil and mix until the dough comes together.
  5. Gradually add the lukewarm water and knead the dough for about 5-7 minutes until it becomes smooth and pliable.
  6. Cover the dough with a damp cloth and let it rest for 10-15 minutes.
  7. Divide the dough into 4-6 equal portions, depending on the size of parathas you prefer.
  8. Roll out each portion into a thin circle, about 6-7 inches in diameter.
  9. Heat a non-stick skillet or tava over medium heat. Place a paratha on the skillet and cook until it starts to puff up and the edges start to curl, about 1-2 minutes.
  10. Flip the paratha and cook the other side until it is golden brown, about another 1-2 minutes.
  11. Brush the paratha with a little ghee or oil and serve hot with your favourite chutney, raita, or curry.
