Dahi Vada | Dahi Bhalla Recipe: A Refreshing Indian Snack
Dahi Vada, also known as Dahi Bhalla in some regions, is a popular Indian snack made from lentil dumplings soaked in yogurt and topped with various chutneys and spices. It’s a delightful combination of textures and flavors. Here’s how to make Dahi Vada:
Ingredients:
For the Vada:
- 1 cup urad dal (split black gram lentils)
- 1/4 cup moong dal (split green gram lentils)
- A pinch of asafoetida (hing)
- 1 teaspoon cumin seeds
- 2-3 green chilies, finely chopped (adjust to taste)
- Salt to taste
- Oil for frying
For Soaking:
- Water for soaking
For the Dahi (Yogurt) Mixture:
- 2 cups thick yogurt (curd)
- 1/2 teaspoon roasted cumin powder
- Salt to taste
- A pinch of red chili powder (optional)
For Topping:
- Tamarind chutney
- Green chutney
- Chaat masala
- Fresh coriander leaves, chopped
- Sev (crispy gram flour noodles)
Instructions:
1. Preparing the Vada:
- Wash and soak urad dal and moong dal together in enough water for about 4-6 hours.
- Drain the soaked lentils and add them to a blender. Blend into a smooth, thick batter using minimal water.
- Add asafoetida (hing), cumin seeds, finely chopped green chilies, and salt to the batter. Mix well.
- Heat oil in a deep frying pan over medium heat.
- Wet your hands with water to prevent the batter from sticking. Take a small portion of the batter and flatten it slightly to form a vada.
- Gently slide the vada into the hot oil and fry until they turn golden brown and crispy. Fry them in batches.
- Remove the vadas from the oil and drain them on paper towels to remove excess oil.
2. Soaking the Vada:
- In a large bowl, take warm water and add a little salt. Soak the fried vadas in this water for about 15-20 minutes. They will absorb the water and become soft.
3. Preparing the Dahi (Yogurt) Mixture:
- In a separate bowl, whisk the thick yogurt until it becomes smooth and creamy.
- Add roasted cumin powder and salt to taste. Mix well.
4. Assembling Dahi Vada:
- Squeeze the soaked vadas gently to remove excess water and arrange them in a serving dish.
- Pour the prepared yogurt mixture over the vadas, ensuring they are fully covered.
- Drizzle tamarind chutney and green chutney on top as per your taste.
- Sprinkle chaat masala, a pinch of red chili powder (if desired), and fresh coriander leaves.
- Finish with a generous topping of sev.
5. Chilling and Serving:
- Refrigerate the Dahi Vada for at least an hour before serving to let the flavors meld.
- Serve chilled and enjoy this delightful Indian snack!
Tips:
- You can adjust the spiciness of the vadas by varying the amount of green chilies in the batter.
- Soaking the vadas in salted water helps them absorb the yogurt and become soft.
Dahi Vada is a beloved Indian snack, especially during festivals and celebrations. The combination of creamy yogurt, crispy vadas, and flavourful chutneys makes it a delightful treat for your taste buds.
