  • Green chutney
  • Chaat masala
  • Fresh coriander leaves, chopped
  • Sev (crispy gram flour noodles)

Instructions:

1. Preparing the Vada:

  1. Wash and soak urad dal and moong dal together in enough water for about 4-6 hours.
  2. Drain the soaked lentils and add them to a blender. Blend into a smooth, thick batter using minimal water.
  3. Add asafoetida (hing), cumin seeds, finely chopped green chilies, and salt to the batter. Mix well.
  4. Heat oil in a deep frying pan over medium heat.
  5. Wet your hands with water to prevent the batter from sticking. Take a small portion of the batter and flatten it slightly to form a vada.
  6. Gently slide the vada into the hot oil and fry until they turn golden brown and crispy. Fry them in batches.
  7. Remove the vadas from the oil and drain them on paper towels to remove excess oil.

2. Soaking the Vada:

  1. In a large bowl, take warm water and add a little salt. Soak the fried vadas in this water for about 15-20 minutes. They will absorb the water and become soft.

3. Preparing the Dahi (Yogurt) Mixture:

  1. In a separate bowl, whisk the thick yogurt until it becomes smooth and creamy.
  2. Add roasted cumin powder and salt to taste. Mix well.

4. Assembling Dahi Vada:

  1. Squeeze the soaked vadas gently to remove excess water and arrange them in a serving dish.
  2. Pour the prepared yogurt mixture over the vadas, ensuring they are fully covered.
  3. Drizzle tamarind chutney and green chutney on top as per your taste.
  4. Sprinkle chaat masala, a pinch of red chili powder (if desired), and fresh coriander leaves.
  5. Finish with a generous topping of sev.

5. Chilling and Serving:

  1. Refrigerate the Dahi Vada for at least an hour before serving to let the flavors meld.
  2. Serve chilled and enjoy this delightful Indian snack!

  • You can adjust the spiciness of the vadas by varying the amount of green chilies in the batter.
