Ingredients:

  • 4 medium-sized potatoes, boiled, peeled, and cubed
  • 1 cup plain yogurt (curd)

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger, grated
  • 1 green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder

  • 1 tablespoon fresh cream (optional)

Method:

  1. In a bowl, whisk the yogurt until smooth. Add water and whisk again to make a creamy consistency. Set aside.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add grated ginger and chopped green chili. Sauté for a minute.
  4. Add turmeric powder, coriander powder, cumin powder, and red chili powder. Mix well.
  5. Quickly add the cubed potatoes and sauté for a few minutes to coat them with the spices.
  6. Reduce the heat to low, and pour the yogurt mixture into the pan. Stir gently to combine. Be careful not to curdle the yogurt.
  7. Cook on low heat for about 10-15 minutes, stirring occasionally, until the gravy thickens and the potatoes absorb the flavors.
  8. Season with salt and mix well.
  9. Add fresh coriander leaves and stir. If desired, you can also add a tablespoon of fresh cream for extra richness.
