Ingredients:
- 1 large onion, finely chopped
- 1 cup gram flour (chickpea flour)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup lemon juice
- 1/4 cup water
- Oil for frying
- Chopped fresh coriander leaves for garnish (optional)
Method:
- In a large bowl, combine the chopped onion, gram flour, turmeric powder, red chilli powder, garam masala powder, salt, and baking soda. Mix well.
- Add the lemon juice and water to the bowl and mix until a thick batter forms.
- Heat oil in a deep frying pan over medium heat.
- Using a spoon, drop small portions of the batter into the hot oil, about the size of a small lemon.
- Fry the bhajiyas until they are golden brown and crispy, about 3-4 minutes on each side.
- Remove the bhajiyas from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve the kanda bhajiyas hot with a steaming cup of chai or a dollop of chutney.
I have fond memories of enjoying kanda bhajiyas at the street food stalls in Mumbai during my childhood. The crispy exterior and soft interior of these onion fritters, paired with a hot cup of chai, is a match made in heaven. It’s a snack that’s both comforting and indulgent, and one that I always look forward to enjoying.
