Ingredients:

  • 1 large onion, finely chopped
  • 1 cup gram flour (chickpea flour)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup lemon juice
  • 1/4 cup water
  • Oil for frying
  • Chopped fresh coriander leaves for garnish (optional)

Method:

  1. In a large bowl, combine the chopped onion, gram flour, turmeric powder, red chilli powder, garam masala powder, salt, and baking soda. Mix well.
  2. Add the lemon juice and water to the bowl and mix until a thick batter forms.
  3. Heat oil in a deep frying pan over medium heat.
  4. Using a spoon, drop small portions of the batter into the hot oil, about the size of a small lemon.
  5. Fry the bhajiyas until they are golden brown and crispy, about 3-4 minutes on each side.
  6. Remove the bhajiyas from the oil and place them on a paper towel-lined plate to drain excess oil.
  7. Serve the kanda bhajiyas hot with a steaming cup of chai or a dollop of chutney.
