Ingredients:

For the Dumplings:

  • 1 cup whole wheat flour (atta)
  • Water, as needed

  • 2 tablespoons gram flour (besan)
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 2-3 green chilies, slit lengthwise
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing the Dumplings:

  1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and water. Knead the mixture to form a smooth, firm dough.
  2. Divide the dough into small portions and shape them into cylindrical rolls about 1/2 inch in diameter.
  3. Cut the rolls into small, round dumplings, around 1/2 inch thick. Set aside.

2. Cooking the Dumplings:

  1. Boil water in a deep pan. Once the water is boiling, gently slide in the dumplings and cook them until they float to the surface. Remove them using a slotted spoon and set aside.

3. Preparing the Gravy:

  1. In a mixing bowl, whisk yogurt and add gram flour (besan) to form a smooth mixture. Set aside.
  2. Heat oil in a deep pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  3. Stir in asafoetida (hing) and green chilies. Sauté for a few seconds.
  4. Reduce the heat to low and add turmeric powder, red chili powder, and coriander powder. Mix well.
  5. Slowly pour the yogurt and besan mixture into the pan, stirring continuously to avoid lumps.
  6. Cook the gravy on low heat, stirring constantly, until it starts to boil.
  7. Add the boiled dumplings and salt to the gravy. Mix gently.

4. Serving:

  1. Cook the curry for a few more minutes until the dumplings absorb the flavors of the gravy.
  2. Garnish with fresh coriander leaves.
  3. Serve Chakki Ki Shaak hot with roti or bhakri.

Tips:

  • Adjust the spice levels according to your preference by varying the amount of green chilies and red chili powder.
  • Ensure the dumplings are firm and not overcooked to maintain their texture in the curry.
