Ingredients

  • 1 cup cashews

  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons grated coconut
  • 2 tablespoons chopped fresh coriander (optional)
  • 2-3 green chilies, slit (optional)
  • Lime wedges for serving (optional)

Method

  1. Heat the coconut oil in a large pan over medium heat.
  2. Add the mustard seeds and cumin seeds. Let them sizzle for a few seconds until fragrant.
  3. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  4. Add the cashews and stir well to combine with the onion mixture.
  5. Add the turmeric powder, red chili powder, and salt. Mix well and cook for about 5 minutes or until the cashews start to brown slightly.
  6. Stir in the grated coconut and continue to cook for another 5 minutes, ensuring the mixture is well combined and the coconut is lightly toasted.
  7. Taste and adjust the seasoning if necessary.
  8. Garnish with chopped coriander and slit green chilies if desired.
  9. Serve hot with rice, roti, or as a side dish.
