Ingredients:
- 250 gm okra (bhindi), cut into small pieces
- 2 medium onions, chopped
- 2 medium tomatoes, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1 teaspoon amchur powder (dried mango powder)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- Salt, to taste
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup water
- Fresh cilantro, for garnish
Method:
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn light golden brown.
- Add chopped tomatoes and sauté until they are soft and mushy.
- Add coriander powder, garam masala powder, amchur powder, turmeric powder, and red chilli powder. Mix well.
- Add salt to taste and mix well.
- Add okra pieces and sauté for 5-7 minutes or until they are cooked through.
- In a small bowl, mix flour and water to make a smooth paste.
- Add the flour paste to the pan and mix well.
- Add butter and mix until it’s fully incorporated.
- Reduce heat to low and let it simmer for 5-7 minutes or until the gravy thickens.
- Garnish with fresh cilantro and serve hot with basmati rice or roti.
