Ingredients:

  • 250 gm okra (bhindi), cut into small pieces
  • 2 medium onions, chopped
  • 2 medium tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon amchur powder (dried mango powder)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt, to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup water
  • Fresh cilantro, for garnish

Method:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn light golden brown.
  3. Add chopped tomatoes and sauté until they are soft and mushy.
  4. Add coriander powder, garam masala powder, amchur powder, turmeric powder, and red chilli powder. Mix well.
  5. Add salt to taste and mix well.
  6. Add okra pieces and sauté for 5-7 minutes or until they are cooked through.
  7. In a small bowl, mix flour and water to make a smooth paste.
  8. Add the flour paste to the pan and mix well.
  9. Add butter and mix until it’s fully incorporated.
  10. Reduce heat to low and let it simmer for 5-7 minutes or until the gravy thickens.
  11. Garnish with fresh cilantro and serve hot with basmati rice or roti.
