Bharwan Bhindi Recipe: Stuffed Okra Curry

Ingredients:
- 250 grams okra (ladyfingers)
- 1/2 cup gram flour (besan)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 large onion, finely chopped
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for garnish
Instructions:
1. Preparing the Okra:
- Wash the okra and pat them dry. Trim the ends and make a slit in the middle, keeping the ends intact.
- Sprinkle a little salt and turmeric powder over the okra, mix gently, and set aside for 15-20 minutes. This helps in reducing the slime in okra.
- After 20 minutes, squeeze the okra gently to remove any excess water and salt.
2. Preparing the Stuffing:
- Heat 1 tablespoon of oil in a pan. Add gram flour (besan) and roast it on medium heat until it turns aromatic and slightly browned. Set aside.
- In the same pan, heat the remaining oil. Add cumin seeds and let them splutter.
- Add chopped onions and green chilies. Sauté until the onions are translucent.
- Stir in ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
- Add the roasted gram flour (besan), coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
- Allow the mixture to cool down. This will be the stuffing for the okra.
3. Stuffing the Okra:
- Carefully stuff each okra with the prepared stuffing mixture. Fill the slit in each okra with the stuffing.
4. Cooking the Stuffed Okra:
- Heat a little oil in a pan. Place the stuffed okra in the pan.
- Cook on low to medium heat, turning occasionally, until the okra is cooked through and slightly crispy on the outside.
5. Serving:
- Garnish with fresh coriander leaves and serve Bharwan Bhindi hot.
- Serve with roti or paratha and garnish with lemon wedges.
Tips:
- Choose tender and small bhindi for this dish as they are less likely to be too slimy.
- Adjust the spice level according to your preference by varying the amount of green chilies and red chili powder.
