Ingredients:

For Bhajani (Flour Mix):

  • 1 cup rice flour
  • 1/4 cup besan (gram flour)
  • 1/4 cup jowar (sorghum) flour
  • 1/4 cup bajra (pearl millet) flour
  • 1/4 cup wheat flour
  • 1/4 cup roasted gram flour (chana dal atta)
  • 2 tablespoons cumin seeds
  • 2 tablespoons coriander seeds
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon sesame seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon asafoetida (hing)
  • Salt to taste

For Thalipeeth:

  • 1 cup bhajani (flour mix)
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 2-3 tablespoons fresh coriander leaves, chopped
  • Water, as needed
  • Oil, for cooking

Method:

For Bhajani (Flour Mix):

  1. Dry roast cumin seeds, coriander seeds, ajwain, and sesame seeds until fragrant. Let them cool.
  2. Grind the roasted spices into a coarse powder.
  3. In a large mixing bowl, combine all the flours – rice flour, besan, jowar flour, bajra flour, wheat flour, and roasted gram flour (chana dal atta).
  4. Add the ground spice mix, turmeric powder, red chili powder, asafoetida, and salt to the flours. Mix well.

For Thalipeeth:

  1. In a mixing bowl, take 1 cup of the bhajani (flour mix).
  2. Add finely chopped onion, green chilies, and fresh coriander leaves.
  3. Gradually add water and knead the mixture into a firm dough. It should be neither too soft nor too hard.
  4. Divide the dough into equal portions and shape them into small balls.
  5. Take a plastic sheet or banana leaf and grease it with a little oil. Place one dough ball on it.
  6. Pat the dough ball to spread it into a thin, round thalipeeth. Make small holes in the thalipeeth using your fingertips.
  7. Heat a griddle or tava and spread a little oil on it.
  8. Carefully lift the thalipeeth from the plastic sheet and place it on the hot griddle.
  9. Cook on medium heat until the bottom side is golden brown and crispy.
  10. Flip and cook the other side until it’s cooked through and crisp.
  11. Serve the Bhajani Thalipeeth hot with curd, pickle, or a side of your choice.

  • The bhajani (flour mix) can be prepared in advance and stored for convenience.
