Method:
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn light brown.
- Add minced garlic and sauté for another minute.
- Add the diced potatoes, cauliflower, carrot, and bell pepper. Stir well.
- Add turmeric powder, red chilli powder, and garam masala powder. Mix well.
- Add salt to taste and stir well.
- Add 1 cup of water and bring to a boil. Reduce the heat to low and let it simmer for 20 minutes or until the vegetables are cooked.
- In a small bowl, mix together mustard paste and plain yogurt.
- Add the mustard-yogurt mixture to the pan and stir well.
- Let it simmer for another 5 minutes or until the gravy thickens.
