Ingredients:

  • 2 medium-sized potatoes, peeled and diced
  • 1 large cauliflower, broken into florets
  • 1 large carrot, peeled and grated
  • 1 large bell pepper, diced
  • 2 medium-sized onions, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon garam masala powder
  • Salt, to taste
  • 2 tablespoons mustard oil
  • 2 tablespoons mustard paste
  • 2 tablespoons plain yogurt
  • Chopped fresh cilantro, for garnish

Method:

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn light brown.
  3. Add minced garlic and sauté for another minute.
  4. Add the diced potatoes, cauliflower, carrot, and bell pepper. Stir well.
  5. Add turmeric powder, red chilli powder, and garam masala powder. Mix well.
  6. Add salt to taste and stir well.
  7. Add 1 cup of water and bring to a boil. Reduce the heat to low and let it simmer for 20 minutes or until the vegetables are cooked.
  8. In a small bowl, mix together mustard paste and plain yogurt.
  9. Add the mustard-yogurt mixture to the pan and stir well.
  10. Let it simmer for another 5 minutes or until the gravy thickens.
  11. Garnish with chopped fresh cilantro and serve hot with steaming rice or roti.
