Ingredients:
- 1 cup split red lentils (masoor dal)
- 1 cup jaggery powder (bellam)
- 1/2 cup grated coconut
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- Oil for frying
- Water as required
Method:
- Rinse the lentils and soak them in water for at least 4 hours or overnight. Drain the water and grind the lentils into a smooth paste.
- In a large mixing bowl, combine the ground lentils, jaggery powder, grated coconut, cardamom powder, salt, and baking soda. Mix well.
- Add water as required to form a thick batter. The batter should be thick enough to hold its shape when dropped from a spoon.
- Heat oil in a deep frying pan over medium heat. Using a spoon, drop small portions of the batter into the hot oil, about the size of a small lemon.
- Fry the vadas until they are golden brown and crispy. Drain the vadas on paper towels.
- Repeat the process until all the batter is used up.
- Let the vadas cool completely before storing them in an airtight container.
