Ingredients:

For the Puri:

  • 2 cups whole wheat flour

  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil, for deep frying

For the Aloo Sabzi:

  • 4-5 medium-sized potatoes, boiled and mashed
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing the Lentil Paste:

  1. Rinse and soak urad dal in water for 4-6 hours.
  2. Grind soaked urad dal, green chilies, and ginger into a smooth paste without adding much water.

2. Making the Puri Dough:

  1. In a mixing bowl, combine whole wheat flour, asafoetida, cumin seeds, fennel seeds, red chili powder, garam masala, salt, and the lentil paste.
  2. Knead into a firm and smooth dough. Let it rest for 30 minutes.

3. Preparing the Aloo Sabzi:

  1. Heat oil in a pan. Add mustard seeds and let them splutter.
  2. Add cumin seeds, turmeric powder, red chili powder, coriander powder, and sauté for a few seconds.
  3. Add mashed potatoes and cook for a few minutes.
  4. Stir in garam masala and salt. Mix well and garnish with fresh coriander leaves. Set aside.

4. Shaping and Frying the Puris:

  1. Heat oil in a deep frying pan over medium heat.
  2. Divide the dough into small lemon-sized balls and flatten them slightly.
  3. Roll each ball into a small disc.
  4. Fry the puris in hot oil until they puff up and turn golden brown on both sides.

5. Serving:

  1. Serve Bedmi Puri hot with aloo sabzi.
  2. Enjoy this flavorful North Indian delicacy!
