Ingredients:
- 2 cups fresh bathua leaves (amaranth greens), washed and chopped
- 1 cup spinach leaves, washed and chopped
- 1/2 cup mustard greens, washed and chopped
- 1/2 cup fenugreek leaves (methi), washed and chopped
- 2 green chilies, finely chopped
- 1 tablespoon ginger, grated
- 3 tablespoons cornmeal (makki ka atta)
- 1/2 cup yogurt
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1/2 teaspoon asafoetida (hing)
- Salt to taste
Method:
- In a large pot, combine bathua, spinach, mustard greens, and fenugreek leaves. Add a cup of water and cook on medium heat until the greens are tender.
- Once cooked, blend the greens into a smooth puree using a hand blender or food processor. Set aside.
- In a separate bowl, mix cornmeal with yogurt to make a smooth paste. Ensure there are no lumps.
- Heat ghee in a pan, add cumin seeds and asafoetida. Allow them to splutter.
- Add chopped green chilies and grated ginger. Sauté for a minute until the raw aroma disappears.
- Pour the cornmeal-yogurt paste into the pan and cook on low heat, stirring continuously, until the mixture thickens.
- Add the green puree to the pan, mix well, and cook for an additional 10-15 minutes on low heat. Season with salt according to your taste.
- Once the saag reaches a thick, creamy consistency, remove from heat.
