Ingredients:

  • 2 cups fresh bathua leaves (amaranth greens), washed and chopped
  • 1 cup spinach leaves, washed and chopped
  • 1/2 cup mustard greens, washed and chopped
  • 1/2 cup fenugreek leaves (methi), washed and chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger, grated
  • 3 tablespoons cornmeal (makki ka atta)
  • 1/2 cup yogurt
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon asafoetida (hing)
  • Salt to taste

Method:

  1. In a large pot, combine bathua, spinach, mustard greens, and fenugreek leaves. Add a cup of water and cook on medium heat until the greens are tender.
  2. Once cooked, blend the greens into a smooth puree using a hand blender or food processor. Set aside.
  3. In a separate bowl, mix cornmeal with yogurt to make a smooth paste. Ensure there are no lumps.
  4. Heat ghee in a pan, add cumin seeds and asafoetida. Allow them to splutter.
  5. Add chopped green chilies and grated ginger. Sauté for a minute until the raw aroma disappears.
  6. Pour the cornmeal-yogurt paste into the pan and cook on low heat, stirring continuously, until the mixture thickens.
  7. Add the green puree to the pan, mix well, and cook for an additional 10-15 minutes on low heat. Season with salt according to your taste.
  8. Once the saag reaches a thick, creamy consistency, remove from heat.
