  • Salt, to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh coriander, chopped (for garnish)

Method:

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onion, green chillies, and sauté until the onion is translucent.
  3. Add diced potatoes, coriander powder, turmeric powder, red chilli powder, and salt. Mix well.
  4. Add 1 cup of water and bring to a boil. Reduce the heat to low and let it simmer for 15-20 minutes or until the potatoes are cooked.
  5. Add diced tomatoes and mix well. Let it simmer for another 5-7 minutes or until the tomatoes are soft and the curry has thickened.
  6. Garnish with chopped coriander and serve hot with roti, rice, or paratha.
