Baked Kachori Recipe: A Healthier Twist to a Classic Snack

Kachori is a popular Indian snack, usually deep-fried and filled with a spicy lentil or peas mixture. In this recipe, we’ll make a healthier version by baking them. Here’s how to make Baked Kachori:

Ingredients:

For the Dough:

  • 1.5 cups all-purpose flour (maida)
  • 1/4 cup oil or ghee
  • Water, as needed
  • Salt to taste

For the Filling:

  • 1 cup yellow moong dal (split yellow lentils)
  • 1-2 green chilies, finely chopped
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • A pinch of asafoetida (hing)
  • Salt to taste
  • 1 tablespoon oil
  • Fresh coriander leaves, chopped for garnish

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine all-purpose flour, oil or ghee, and salt.
  2. Gradually add water and knead to form a smooth and firm dough.
  3. Cover the dough and let it rest for 20-30 minutes.

2. Preparing the Filling:

  1. Wash and soak moong dal for 2-3 hours. Drain well.
  2. Grind the soaked dal coarsely without using water.
  3. Heat oil in a pan. Add cumin seeds, fennel seeds, and asafoetida.
  4. Add the ground dal, green chilies, ginger, red chili powder, garam masala, and salt. Cook until the mixture is dry and aromatic. Set aside to cool.

3. Shaping and Filling:

  1. Preheat the oven to 180°C (356°F).
  2. Divide the dough into small lemon-sized balls.
  3. Roll each ball into a small circle. Place a spoonful of the filling in the center.
  4. Seal the edges of the dough, ensuring the filling is enclosed.
  5. Flatten the filled dough slightly.

4. Baking:

  1. Place the prepared kachoris on a baking tray lined with parchment paper.
  2. Brush the kachoris lightly with oil.
  3. Bake in the preheated oven for 25-30 minutes or until they turn golden and crisp.

5. Serving:

  1. Garnish with chopped coriander leaves.
  2. Serve Baked Kachori with green chutney or tamarind chutney.

  • You can experiment with different fillings like potatoes, peas, or lentils for variety.
  • Adjust the spice levels to suit your taste preferences.
