  • 10-12 cashews
  • 1 tablespoon raisins

Method:

  1. Preparation: Rinse the flattened rice under running water to remove any impurities. Drain and set aside.
  2. Jaggery Syrup: In a saucepan, add the grated jaggery and 1/4 cup of water. Heat over low to medium heat, stirring continuously until the jaggery completely dissolves. Strain the jaggery syrup to remove impurities.
  3. Coconut Mixture: In a separate bowl, mix the grated coconut with a pinch of salt and cardamom powder. Set aside.
  4. Combining Ingredients: In a large mixing bowl, add the rinsed flattened rice (aval) and pour the jaggery syrup over it. Mix well to coat the flattened rice evenly with the syrup.
  5. Adding Coconut: Gently fold in the coconut mixture with the sweetened flattened rice.
  6. Tempering: In a small pan, heat ghee over low heat. Add cashews and raisins and sauté until they turn golden brown.
  7. Mixing Tempering: Pour the ghee, cashews, and raisins over the Aval Vilayichathu mixture. Mix everything together.
  8. Resting: Allow the prepared Aval Vilayichathu to rest for about 10 minutes to let the flavors meld.
