Ingredients:

  • 1 cup split pigeon peas (toor dal)
  • 1 cup mixed vegetables (pumpkin, raw banana, drumsticks, etc.)
  • 1 large tomato, chopped
  • 1 onion, finely chopped
  • 2 green chillies, slit
  • 1-inch ginger, grated
  • 2 cloves garlic, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 dried red chillies
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  1. Wash the toor dal thoroughly and cook it in a pressure cooker until soft. Set aside.
  2. In a large pan, heat oil. Add cumin seeds, mustard seeds, and dried red chillies. Allow them to splutter.
  3. Add chopped onions, green chillies, grated ginger, and minced garlic. Sauté until the onions turn golden brown.
  4. Add turmeric powder and chopped tomatoes. Cook until the tomatoes are soft and oil starts to separate.
  5. Add the mixed vegetables and cook for 5 minutes.
  6. Pour in the cooked dal and mix well. Adjust the consistency with water if needed.
  7. Season with salt and let it simmer for 15-20 minutes until the vegetables are tender.
  8. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
