  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
  • 1/4 teaspoon salt
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped almonds
  • 2 tablespoons ghee
  • Puri dough (see below for recipe)

Puri Dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup ghee
  • 1/2 cup lukewarm water

Method:

  1. In a large bowl, whisk together the curd, mango puree, sugar, cardamom powder, saffron, and salt until smooth.
  2. Refrigerate the mixture for at least 30 minutes to allow the flavours to meld.
  3. Meanwhile, prepare the puri dough by combining the flour, salt, and baking powder in a bowl.
  4. Add the ghee and mix until the dough comes together.
  5. Gradually add the lukewarm water and knead the dough for 5-7 minutes until smooth.
  6. Cover the dough with a damp cloth and let it rest for 30 minutes.
  7. Divide the dough into 6-8 equal portions and roll out each portion into a thin circle.
  8. Heat a non-stick pan over medium heat and cook the puris until they puff up and are golden brown.
  9. Serve the amrakhand chilled, garnished with chopped nuts and accompanied by the crispy puris.
