Aloo Tikki Recipe: Spiced Potato Patties

- Sev (thin gram flour noodles)
- Fresh coriander leaves, chopped
- Red chili powder
- Chaat masala
Instructions:
1. Preparing the Potato Mixture:
- In a mixing bowl, combine mashed potatoes, boiled green peas, chopped green chilies, grated ginger, soaked and squeezed bread crumbs or poha, cumin seeds, garam masala, red chili powder, amchur, chaat masala, chopped fresh coriander leaves, and salt.
- Mix well to form a uniform mixture. Adjust seasoning as needed.
2. Shaping and Frying the Tikki:
- Divide the mixture into equal-sized portions and shape them into round, flat patties (tikkis).
- Heat oil in a frying pan over medium heat.
- Once the oil is hot, carefully place the tikkis into the pan.
- Shallow-fry the tikkis until they are golden brown and crispy on both sides.
- Remove excess oil by placing the tikkis on a paper towel.
3. Serving:
- Serve the Aloo Tikkis hot.
- Garnish with green chutney, tamarind chutney, yogurt, sev, chopped coriander leaves, a sprinkle of red chili powder, and chaat masala.
Tips:
- If the mixture is too soft and difficult to shape into patties, you can refrigerate it for 15-20 minutes to firm up.
