Method

  1. In a large mixing bowl, combine the mashed potatoes, refined flour, rice flour, salt, black pepper, cumin seeds, coriander powder, garam masala powder, turmeric powder, and red chili powder (if using). Mix well until all the ingredients are fully incorporated.
  2. Knead the mixture to form a smooth dough. If the dough is too sticky, add a little more refined flour.
  3. Divide the dough into 12-15 equal portions. Shape each portion into a round patty.
  4. Heat a non-stick pan or griddle over medium heat. Brush the pan with a little ghee or vegetable oil.
  5. Place the patties on the pan and cook until they are golden brown on both sides, flipping them occasionally. This should take about 3-4 minutes per side.
  6. Once the patties are cooked, remove them from the pan and garnish with chopped fresh coriander.
  7. Serve the Aloo Pithe hot with a squeeze of lemon juice if desired.
