  • 3 cloves garlic, grated
  • 1 teaspoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon salt (or more to taste)
  • 2 medium potatoes, peeled and diced
  • 1 head of cauliflower, broken into florets
  • 1 cup vegetable broth
  • 1 cup water or additional vegetable broth if needed
  • Fresh cilantro for garnish

Method

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until it is translucent and starting to brown.
  2. Add the grated garlic and ginger to the pan and cook for another minute, stirring constantly to prevent burning.
  3. Stir in the curry powder, turmeric, cumin, coriander, black pepper, and red pepper flakes. Cook for about 1 minute, until the spices are fragrant.
  4. Add the diced potatoes and cauliflower florets to the pan. Stir well to coat the vegetables with the spice mixture.
  5. Pour in the vegetable broth and water (or additional broth), and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pan with a lid, and simmer for about 20-25 minutes, or until the potatoes and cauliflower are tender.
  7. Season with salt to taste. Garnish with fresh cilantro and serve with lemon wedges on the side if desired.
