Ingredients:

  • 4 medium-sized potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chillies, slit
  • 1/2 cup green peas (optional)
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  1. Heat oil in a pan and add cumin seeds and mustard seeds. Allow them to splutter.
  2. Add finely chopped onions and sauté until golden brown.
  3. Stir in the tomato puree and cook until the oil separates from the masala.
  4. Add turmeric powder, red chilli powder, and coriander powder. Cook for 2 minutes.
  5. Toss in the diced potatoes and green peas (if using). Mix well to coat the vegetables with the masala.
  6. Pour in enough water to cover the potatoes. Season with salt and bring it to a boil.
  7. Reduce the heat, cover the pan, and simmer until the potatoes are tender.
  8. Sprinkle garam masala and simmer for an additional 5 minutes.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with chapatis or steamed rice.
