- Toss in the diced potatoes and green peas (if using). Mix well to coat the vegetables with the masala.
- Pour in enough water to cover the potatoes. Season with salt and bring it to a boil.
- Reduce the heat, cover the pan, and simmer until the potatoes are tender.
- Sprinkle garam masala and simmer for an additional 5 minutes.
- Garnish with fresh coriander leaves.
- Serve hot with chapatis or steamed rice.
