Ingredients:
For the Thalipeeth Dough:
- 1 cup jowar (sorghum) flour
- 1/2 cup besan (gram flour)
- 1/4 cup rice flour
- 1/4 cup bajra (pearl millet) flour
- 1/4 cup whole wheat flour (atta)
- 1/4 cup grated bottle gourd (lauki)
- 1/4 cup finely chopped onions
- 2-3 green chilies, finely chopped (adjust to taste)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- A pinch of asafoetida (hing)
- Salt to taste

Method:
- In a large mixing bowl, combine jowar flour, besan, rice flour, bajra flour, whole wheat flour, grated bottle gourd, chopped onions, green chilies, cumin seeds, turmeric powder, asafoetida, and salt.
- Gradually add water to the mixture and knead it into a soft, pliable dough. The water should be just enough to form a smooth dough. Cover the dough and let it rest for 10-15 minutes.
- Divide the dough into equal portions and shape each portion into a ball.
- Take a clean, damp cloth or plastic sheet and place one dough ball in the center. Pat it with your fingers to flatten it into a round, flat disc, shaping it into a thalipeeth. Make a hole in the center of the thalipeeth to help it cook evenly.
- Heat a non-stick griddle or tava over medium heat. Place the shaped thalipeeth on the hot griddle.
- Drizzle a little oil around the edges of the thalipeeth and cook until the bottom is golden brown.
- Carefully flip the thalipeeth and cook the other side until it’s crispy and cooked through.
- Repeat the same process for the remaining dough portions.
