Ingredients:

For Sarson ka Saag:

  • 500g mustard greens (sarson)
  • 250g spinach (palak)
  • 2-3 green chilies, chopped
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 tablespoons makki ka atta (maize flour)
  • 2 tablespoons ghee or clarified butter
  • 1/2 teaspoon red chili powder
  • Salt, to taste

For Makki de Roti:

  • 2 cups makki ka atta (maize flour)
  • Warm water, as needed
  • Ghee or butter, for cooking

Method:

Sarson ka Saag:

  1. Wash and chop the mustard greens and spinach. Boil them with a little salt and water until they become soft. Drain and keep aside.
  2. In a large pan, heat ghee and add chopped onions. Sauté until they turn golden brown.
  3. Add chopped green chilies, minced garlic, and grated ginger. Sauté for a few more minutes.
  4. Add boiled greens, red chili powder, and salt. Cook for 15-20 minutes, mashing and stirring occasionally.
  5. Sprinkle makki ka atta and continue to cook until the saag thickens.
  6. Serve hot, garnished with a dollop of ghee.

Makki de Roti:

  1. In a mixing bowl, knead makki ka atta with warm water to make a soft and pliable dough.
  2. Divide the dough into small portions and shape them into balls.
  3. Place a ball of dough between two plastic sheets or on a greased surface. Flatten it gently with your fingers to form a round, flatbread.
  4. Heat a griddle or tava and cook the roti with a little ghee or butter until both sides are golden brown.
  5. Serve the hot and crispy Makki de Roti with Sarson ka Saag.
