Ingredients:

For the Paratha Dough:

  • 2 cups whole wheat flour
  • Water, as needed
  • Salt, to taste

For the Onion Filling:

  • 2 large onions, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon amchur (dry mango) powder
  • 2 tablespoons fresh coriander leaves, chopped
  • Salt, to taste
  • Ghee or oil, for cooking

Method:

1. Prepare the Paratha Dough:

  1. In a mixing bowl, combine the whole wheat flour, salt, and a little water at a time to form a smooth and soft dough. Knead the dough well, cover it, and let it rest for 15 minutes.

2. Prepare the Onion Filling:

  1. In a separate bowl, combine the finely chopped onions, green chilies, ajwain, cumin seeds, red chili powder, garam masala, amchur powder, fresh coriander leaves, and salt.
  2. Mix well to create the onion filling. Set aside.

3. Shape the Parathas:

  1. Divide the rested dough into 4 equal portions and roll them into balls.
  2. Take one dough ball and roll it into a small circle (about 4-5 inches in diameter) on a floured surface.
  3. Place a portion of the prepared onion filling in the center of the rolled dough.
  4. Bring the edges of the dough together to enclose the filling, then flatten it gently.
  5. Roll it out again into a larger circle, taking care not to tear the dough.

4. Cook the Parathas:

  1. Heat a griddle or tawa over medium-high heat. Place the rolled paratha on the hot surface.
  2. Cook one side until you see bubbles forming and then flip it.
  3. Spread ghee or oil on the cooked side and then flip it again. Cook until both sides are golden brown.
  4. Repeat this process for the remaining dough balls.

5. Serve:

  1. Serve the hot and crispy Pyaz ke Parathas with yogurt, chutney, or pickles.

Enjoy these delicious and flavorful onion-stuffed parathas as a satisfying meal or snack!
