Ingredients:

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to make a soft and pliable dough. Cover and let it rest for 15-20 minutes.

2. Making the Filling:

  1. In a separate bowl, combine grated cauliflower, finely chopped onion, green chilies, cumin seeds, garam masala, red chili powder, asafoetida, salt, and fresh coriander leaves. Mix well.

3. Assembling the Parathas:

  1. Divide the dough into equal portions to make small balls.
  2. Roll out a small dough ball into a small circle (about 4-5 inches in diameter).
  3. Place a portion of the cauliflower filling in the center of the circle.
  4. Bring the edges of the dough together to cover the filling and form a ball.
  5. Gently flatten the filled ball and roll it out into a paratha.

4. Cooking the Parathas:

  1. Heat a griddle (tava) over medium heat. Place a paratha on it.
  2. Cook until one side is golden brown, then flip and cook the other side. Apply ghee or oil on both sides while cooking.
  3. Cook until the paratha is crispy and has golden brown spots.

5. Serving:

  1. Serve the hot Gobi Parathas with yogurt, pickle, or chutney.
