    • Roll it out into a thick, round disc using a rolling pin. Aim for a thickness similar to a paratha.
    • If the dough sticks to the rolling pin or the surface, you can dust it lightly with flour.
  4. Cook the Koki:
    • Heat a griddle or non-stick pan over medium heat. Add a little oil.
    • Carefully place the rolled-out Koki onto the hot griddle.
    • Cook until it turns golden brown on one side, then flip it over and cook the other side with a little more oil until it’s golden and crisp.
  5. Serve Hot:
    • Remove the cooked Koki from the griddle.
