Instructions:

1. Preparing the Sabudana:

  1. Rinse the sabudana under cold running water until the water runs clear.
  2. Soak the rinsed sabudana in enough water for 2-3 hours. They should swell and become soft.
  3. After soaking, drain the sabudana and set them aside.

2. Cooking the Sabudana:

  1. In a heavy-bottomed pan, heat the ghee.
  2. Add the drained sabudana and sauté on low heat for a few minutes. This ensures they don’t stick together.
  3. Add milk and bring the mixture to a boil. Then, reduce the heat to low and let it simmer, stirring occasionally, until the sabudana are cooked and the mixture thickens. This should take about 20-30 minutes.

3. Sweetening the Kheer:

  1. Add sugar and continue to cook the kheer until the sugar dissolves and the kheer thickens to your desired consistency.
  2. Add powdered cardamom and saffron strands (if using). Mix well.

4. Garnishing:

  1. Add the chopped mixed dry fruits to the kheer and stir.
  2. Remove the kheer from heat.

5. Serving:

  1. Serve Sabudana Kheer hot or chilled, garnished with saffron strands and fresh rose petals or edible silver leaves if you like.
