  1. In a blender, grind grated coconut, green chilies, and a pinch of salt to a coarse mixture. Set aside.

3. Cooking the Beetroot:

  1. Heat oil in a pan over medium heat.
  2. Add mustard seeds and let them splutter. Add urad dal, cumin seeds, and asafoetida. Sauté for a minute.
  3. Add broken dry red chilies and curry leaves. Sauté briefly.
  4. Stir in the grated beetroot and sauté for a couple of minutes.
  5. Reduce the heat to low, cover the pan, and let the beetroot cook until tender. Stir occasionally.

4. Adding Coconut Mix:

  1. Once the beetroot is cooked, add the prepared coconut mixture and mix well.
  2. Cook for a few more minutes until the flavors meld and the mixture is well combined.

5. Adjusting Seasoning:

  1. Check for salt and adjust if needed.
  2. Turn off the heat.

6. Serving:

  1. Serve Beetroot Thoran hot as a side dish with steamed rice and other Indian accompaniments.
