Shahi Paneer Recipe: A Creamy Indian Cottage Cheese Curry

Ingredients:

- 2-3 green chilies, slit lengthwise

- 1-2 bay leaves
- 4-5 green cardamom pods
- 1-2 black cardamom pods
- 1-inch cinnamon stick
- 4-5 cloves
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Preparing the Gravy Base:
- In a pan, heat a little ghee or oil. Add cumin seeds, bay leaves, green cardamom, black cardamom, cinnamon, and cloves. Sauté for a minute.
- Add chopped onions, ginger, garlic, and green chilies. Sauté until the onions turn golden brown.
- Add chopped tomatoes and cashews. Cook until the tomatoes are soft.
- Let this mixture cool, then blend into a smooth paste.
2. Cooking the Paneer:
- In the same pan, add a little more ghee or oil if needed. Add the blended paste.
- Cook on medium heat and add turmeric powder, red chili powder, coriander powder, and salt.
- Add yogurt and mix well until the masala starts to leave the sides of the pan.
- Stir in cream and garam masala.
- Add the paneer cubes and let the gravy simmer for a few minutes until the paneer absorbs the flavors.
3. Serving:
- Garnish with fresh coriander leaves.
- Serve Shahi Paneer hot with naan, roti, or rice.
Tips:
- Adjust the spice levels according to your preference by varying the amount of green chilies and red chili powder.
- For a richer taste, you can add a little butter or ghee on top before serving.
