Kadalai Mittai, also known as Peanut Chikki or Peanut Jaggery Bars, is a popular South Indian sweet made with roasted peanuts and jaggery. It’s a crunchy, sweet snack that’s loved by all. Here’s how to make Kadalai Mittai:

Ingredients:

  • 1 cup peanuts (raw or roasted, skin removed)
  • 1/2 cup jaggery (crushed or powdered)
  • 1/4 cup water
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee (clarified butter)
  • A pinch of salt

Instructions:

1. Preparing the Peanuts:

  1. If using raw peanuts, roast them in a pan on medium heat until they’re slightly browned and crunchy. Remove the skins by rubbing them between your palms.
  2. Coarsely crush the roasted peanuts. Set aside.

2. Making the Jaggery Syrup:

  1. In a pan, add jaggery and water. Heat over medium heat, stirring until the jaggery melts and forms a syrup.
  2. Cook the jaggery syrup until it reaches a soft ball consistency. To test this, drop a small amount of syrup into a bowl of water. It should form a soft ball that can be easily pressed between your fingers.
  3. Add a pinch of salt and cardamom powder to the syrup. Mix well.

3. Combining Peanuts and Jaggery:

  1. Add the crushed peanuts to the jaggery syrup. Mix until the peanuts are well-coated with the syrup.
  2. Add ghee and continue to mix until the mixture thickens and starts leaving the sides of the pan.

4. Shaping the Kadalai Mittai:

  1. Grease a flat surface or a rolling board with a little ghee.
  2. Pour the peanut-jaggery mixture onto the greased surface.
  3. Roll it out with a greased rolling pin to your desired thickness.
  4. While still warm, cut the rolled mixture into squares or diamonds using a knife.
  5. Allow the Kadalai Mittai to cool and harden completely.

5. Serving:

  1. Once cooled and firm, carefully separate the pieces.
  2. Serve and enjoy these crunchy and sweet Peanut Jaggery Bars!

Tips:

  • Be cautious while working with hot jaggery syrup to prevent burns.
  • Adjust the sweetness according to your preference by varying the amount of jaggery.
