Instructions:

1. Preparing the Chickpeas:

  1. Rinse the soaked chickpeas under running water and drain.
  2. Pressure cook the chickpeas with enough water until they are tender. Drain and set aside.

2. Making the Masala:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in minced garlic, grated ginger, and green chilies. Sauté for a minute.
  4. Add chopped tomatoes, tomato paste, and cook until the tomatoes are soft and mushy.
  5. Add coriander powder, turmeric powder, red chili powder, ground cumin, and ground coriander. Sauté for a few minutes.

3. Cooking the Chickpeas:

  1. Add the cooked chickpeas to the masala mixture. Mix well.
  2. Add garam masala and salt. Stir to combine.
  3. Add water to achieve the desired consistency. Simmer the curry for 10-15 minutes to allow the flavors to meld.

4. Serving:

  1. Garnish with fresh coriander leaves.
  2. Serve Chana Masala hot with rice or Indian breads like roti or naan.
