1. Preparing the Filling:
- Drain the soaked moong dal and grind it into a coarse paste without adding water.
- In a pan, heat a little oil. Add asafoetida, cumin seeds, and fennel seeds. Sauté for a minute.
- Add the ground moong dal, grated ginger, and chopped green chilies. Cook on medium heat until the mixture becomes dry and aromatic.
- Stir in red chili powder, garam masala, and salt. Mix well and let the mixture cool.
2. Preparing the Dough:
- In a large mixing bowl, combine all-purpose flour, a pinch of salt, and ghee.
- Gradually add water and knead the mixture to form a soft and smooth dough.
- Cover the dough with a damp cloth and let it rest for 15-20 minutes.
3. Shaping and Frying the Kachoris:
- Take a small portion of the dough and roll it into a small ball.
- Roll out the ball into a small disc.
- Place a spoonful of the prepared filling in the center.
- Seal the edges, ensuring the filling is completely covered.
- Flatten the ball slightly.
- Heat oil in a deep pan or kadai over medium heat for deep frying.
- Once the oil is hot, gently slide the kachoris into the oil.
- Fry the kachoris until they’re golden brown and crispy on both sides.
4. Serving:
- Drain excess oil by placing the fried kachoris on paper towels.
