Ingredients:

  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida (hing)

Instructions:

1. Preparing the Kachori Dough:

  1. In a mixing bowl, combine all-purpose flour, a pinch of baking soda, and salt.
  2. Add oil or ghee and mix well until the mixture resembles breadcrumbs.
  3. Gradually add water and knead to form a soft and smooth dough. Cover the dough and let it rest for 15-20 minutes.

2. Making the Lentil Filling:

  1. Rinse the soaked chana dal and drain the water.
  2. Coarsely grind the chana dal in a food processor, without using any water.
  3. Transfer the ground dal to a bowl and add green chilies, ginger, cumin seeds, fennel seeds, garam masala, red chili powder, turmeric powder, asafoetida, and salt. Mix well to form the filling.

3. Shaping and Filling the Kachori:

  1. Divide the dough into small lemon-sized balls.
  2. Roll each ball into a small disc (approximately 3-4 inches in diameter).
  3. Place a spoonful of the lentil filling in the center of each disc.
  4. Carefully gather the edges and seal to form a ball.
  5. Flatten the filled ball slightly.

4. Deep Frying the Kachori:

  1. Heat oil in a deep pan over medium heat for deep frying.
  2. Carefully slide the filled kachoris into the hot oil and fry until they are golden brown and crispy.
  3. Remove the kachoris and drain excess oil by placing them on a paper towel.

5. Serving:

  1. Serve Dal Kachori hot with green chutney, tamarind chutney, or yogurt.
  2. Enjoy these crispy and flavorful kachoris as a snack or appetizer!
