  • 1/2 teaspoon ajwain seeds (carom seeds)
  • 1/2 teaspoon kalonji (nigella seeds)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon ginger-garlic paste
  • Juice of 1 lemon

For Chokha:

  • 2 large potatoes, boiled and mashed
  • 2 large tomatoes, roasted and mashed
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped
  • Fresh coriander leaves, chopped
  • Salt to taste
  • Juice of 1 lemon
  • Mustard oil, for flavor

Instructions:

1. Preparing the Dough for Litti:

  1. In a large mixing bowl, combine whole wheat flour, a pinch of salt, and ghee.
  2. Gradually add water and knead to make a firm and smooth dough.
  3. Cover the dough and let it rest for about 30-40 minutes.

2. Preparing the Filling for Litti:

  1. In a mixing bowl, combine roasted gram flour (sattu), chopped green chilies, chopped onions, mustard oil, ajwain seeds, kalonji, salt, red chili powder, turmeric powder, ginger-garlic paste, and lemon juice.
  2. Mix well until the mixture is moist and holds together. Adjust salt and spice levels to your taste.
  3. Make small lemon-sized balls (litti) from the mixture and set aside.

3. Preparing Litti:

  1. Preheat your oven to 180°C (350°F).
  2. Flatten each dough ball (prepared in step 1) and place a sattu filling ball inside.
  3. Seal the edges and shape them into round balls.
  4. Place the balls on a baking tray and bake for 25-30 minutes, flipping them halfway through to ensure even baking. Alternatively, you can also cook them over a direct flame or in a preheated tandoor.

4. Preparing Chokha:

  1. For the chokha, mix the mashed potatoes, roasted and mashed tomatoes, chopped onions, chopped green chilies, and fresh coriander leaves.
  2. Add salt, lemon juice, and a drizzle of mustard oil. Mix well.

5. Serving:

  1. Serve hot litti with chokha.
  2. You can also serve them with ghee for a traditional touch.

Tips:

  • Litti can also be cooked traditionally by placing them on direct heat (wood-fired ovens or charcoal flame) until they are golden and crispy.
  • Adjust the spiciness by varying the amount of green chilies and red chili powder.
