Ingredients:

  • 200 grams paneer (cottage cheese), cubed
  • 1 cup onion, finely chopped
  • 1 cup tomato puree
  • 1/2 cup fresh cream (malai)
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1-2 green chilies, slit lengthwise
  • 2-3 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing the Paneer:

  1. Cut the paneer into cubes and soak them in warm water for 15-20 minutes. This keeps them soft.
  2. Drain the water and pat dry the paneer cubes using a kitchen towel.

2. Making the Gravy:

  1. Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Stir in the ginger-garlic paste and green chilies. Sauté for a minute.
  4. Add the tomato puree and cook until the oil separates from the masala.
  5. Lower the heat and add turmeric powder, red chili powder, coriander powder, and garam masala. Cook the spices for a couple of minutes.
  6. Add fresh cream (malai) and mix well.
  7. Add the soaked and dried paneer cubes. Gently mix to coat the paneer with the gravy.

3. Cooking the Curry:

  1. Add a little water to achieve the desired consistency.
  2. Simmer the curry on low heat for about 10-15 minutes to let the flavors meld and the paneer absorb the flavors.
  3. Adjust salt and spice levels according to taste.

4. Serving:

  1. Garnish with fresh coriander leaves.
  2. Serve Malai Paneer Curry hot with naan, roti, or rice.
