Hirekayi Dosa Recipe: A Flavourful Ridge Gourd Dosa

Ingredients:
- 1 cup ridge gourd (hirekayi), grated

Instructions:
1. Preparing the Batter:
- Wash and soak rice and urad dal in separate bowls for at least 4-6 hours or overnight.
- Grind the soaked rice, urad dal, chopped green chilies, ginger, cumin seeds, and asafoetida into a smooth batter. Add water gradually to achieve the right consistency. The batter should be similar to regular dosa batter.
- Transfer the batter into a bowl.
- Squeeze out excess water from the grated ridge gourd and add it to the dosa batter.
- Mix the grated ridge gourd into the batter thoroughly.
2. Fermenting the Batter:
- Cover the batter and let it ferment for 6-8 hours or until it rises and becomes slightly airy.

- Heat a non-stick skillet or dosa pan over medium heat.
