  • 4 cups whole milk
  • 1 cup sugar

  • 1 teaspoon rosewater

Method:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. In a heavy-bottomed pan, heat the ghee over medium heat. Add the drained rice and sauté for a few minutes until the rice turns translucent.
  3. Pour in the milk, add the saffron-infused milk, and bring it to a gentle boil. Reduce the heat to low and let the rice simmer in the milk, stirring occasionally, until the rice is soft and the mixture thickens. This may take around 30-35 minutes.
  4. Add sugar, heavy cream, ground cardamom, and ground cinnamon. Stir well and let it simmer for an additional 10 minutes. The pudding should have a creamy consistency.
  5. Remove the pan from the heat and stir in the rosewater.
  6. Let the Shir Berinj cool to room temperature, and then refrigerate it for a few hours to chill.
  7. Serve chilled, garnished with chopped pistachios, almonds, and dried rose petals if desired.
