Bedu Roti, also known as “Siddu” or “Bedvi,” is a traditional steamed bread from the Himachal Pradesh region of India. It’s made from wheat flour and filled with a spiced stuffing, often made of urad dal (black gram lentils). Here’s how to make Bedu Roti:

Ingredients:

For the Dough:

  • 2 cups wheat flour
  • Water, as needed
  • Salt to taste

For the Stuffing:

  • 1 cup urad dal (black gram lentils), soaked overnight
  • 2-3 green chilies, finely chopped
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon asafoetida (hing)
  • Salt to taste

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine wheat flour and salt. Gradually add water and knead to make a soft, pliable dough. Cover and set aside.

2. Preparing the Stuffing:

  1. Rinse the soaked urad dal and drain the water.
  2. Grind the urad dal into a coarse paste without adding water.
  3. Transfer the ground dal to a mixing bowl. Add chopped green chilies, grated ginger, cumin seeds, asafoetida, and salt. Mix well to combine.

3. Making the Roti:

  1. Divide the dough into small lemon-sized balls.
  2. Take a dough ball and flatten it into a small disc using your palm.
  3. Place a spoonful of the prepared dal stuffing in the center of the disc.
  4. Gather the edges of the disc to encase the stuffing, sealing it inside the dough.
  5. Gently flatten the dough ball to make a thick, round roti.

4. Steaming the Roti:

  1. Heat water in a steamer or a large pot.
  2. Place a parchment paper or a clean, thin cloth in the steamer.
  3. Arrange the prepared bedu rotis on the parchment paper.
  4. Steam the rotis for 20-25 minutes or until they are cooked and firm.

5. Serving:

  1. Serve hot Bedu Roti with ghee (clarified butter), curd, or any Indian side dish of your choice.

Tips:

  • The consistency of the dough should be soft but not sticky. Adjust the water accordingly while kneading.
  • You can experiment with different stuffings like grated vegetables or a mix of lentils for variation.
