Ingredients

For the Rasam:
– Ball sized tamarind
– 3 cups water
– 2 chillies
– 1 onion, finely chopped
– 2 tbsp curry leaves, finely chopped
– 2 tbsp coriander, finely chopped
– 1 tsp jaggery / gud
– ¾ tsp salt
For the Tempering:
– 3 tsp oil
– 1 tsp cumin / jeera
– 1 dried red chilli
– Few curry leaves

Method

  1. In a small bowl, combine the tamarind paste and ½ cup water. Stir in the chopped onions, green onions, salt, sugar, and roasted sesame powder. Using clean hands, mix all the ingredients well for about 1~2 minutes. Stir in another 1 cup water and mix again. Taste and adjust the seasoning by adding more tamarind, salt, or green chilies if necessary.
  2. Heat oil in a small pan. Add mustard seeds and cumin seeds. Once the seeds start to splutter, add curry leaves and cook for 30 seconds.
  3. Add the tempering into the tamarind mixture and mix well.
  4. Serve the Pachi Pulusu with rice and dal.
