Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup rice flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 tablespoon ghee or oil
  • 1/2 cup lukewarm water
  • Chopped fresh coriander for garnish (optional)
  • Chutney or pickle for serving (optional)

Method

  1. In a large mixing bowl, combine the all-purpose flour, rice flour, salt, and baking soda.
  2. Add the ghee or oil and mix well until the mixture resembles breadcrumbs.
  3. Gradually add the lukewarm water and knead the dough until it becomes smooth and pliable.
  4. Cover the dough with a damp cloth and let it rest for about 10 minutes.
  5. Divide the dough into 4-6 equal portions, depending on the size you prefer for your dhuska.
  6. Roll out each portion into a thin circle, about 3-4 inches in diameter.
  7. Heat a non-stick pan or a deep frying pan with about 1-2 inches of oil over medium heat.
  8. When the oil is hot, carefully place a dhuska in the oil and fry until it is golden brown on both sides. Repeat with the remaining dough portions.
  9. Remove the dhuska from the oil and place it on a paper towel to drain excess oil.
  10. Serve hot with your favorite chutney or pickle. Garnish with chopped fresh coriander if desired.

Special Note

Dhuska holds a special place in Jharkhandi cuisine and is often associated with family gatherings and festive celebrations. The simplicity of this dish, combined with its rich flavour and texture, makes it a beloved treat across generations. I particularly enjoy dhuska because of its versatility; it can be paired with a variety of chutneys and curries, making each bite a unique experience.
