Method
- Heat the coconut oil in a large pan over medium heat.
- Add the mustard seeds and cumin seeds. Let them sizzle for a few seconds until fragrant.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
- Add the cashews and stir well to combine with the onion mixture.
- Add the turmeric powder, red chili powder, and salt. Mix well and cook for about 5 minutes or until the cashews start to brown slightly.
- Stir in the grated coconut and continue to cook for another 5 minutes, ensuring the mixture is well combined and the coconut is lightly toasted.
- Taste and adjust the seasoning if necessary.
- Garnish with chopped coriander and slit green chilies if desired.
