Ingredients

  • 1 medium-sized pumpkin, peeled and diced
  • 1 cup red kidney beans or any other preferred beans, soaked overnight and drained
  • 2 medium onions, chopped
  • 3-4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala powder
  • Salt, to taste
  • 2 tablespoons coconut oil
  • 2 tablespoons grated coconut
  • 2 tablespoons coconut milk (optional)
  • 2-3 green chilies, slit (optional)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving (optional)

Method

  1. In a blender or grinder, blend the cumin seeds, coriander seeds, turmeric powder, red chili powder, and garam masala powder into a coarse powder.
  2. In a large pan, heat the coconut oil over medium heat. Add the blended spice mixture and sauté for a minute until fragrant.
  3. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent.
  4. Add the diced pumpkin and soaked beans. Mix well and cook for about 5 minutes.
  5. Add enough water to cover the pumpkin and beans, and bring to a boil. Reduce the heat to low and let it simmer until the pumpkin and beans are cooked through.
  6. Stir in the grated coconut and coconut milk (if using). Season with salt to taste.
  7. Simmer for another 10 minutes to allow the flavors to meld together.
  8. Garnish with fresh cilantro and serve hot with rice, roti, or paratha.
