  • 1/2 cup granulated sugar
  • 1/4 teaspoon baking soda

  • 1/4 teaspoon nutmeg powder

Method

  1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a large mixing bowl, combine the flour, baking soda, salt, cardamom powder, and nutmeg powder.
  3. Add the softened ghee to the dry ingredients and mix until the mixture resembles coarse breadcrumbs.
  4. Gradually add the granulated sugar and mix well until the dough comes together. It should be crumbly but hold its shape when pressed.
  5. Shape the dough into small balls, about the size of a small lemon. Flatten each ball slightly into a disk shape.
  6. Place the cookies on the prepared baking tray, leaving about 1 inch of space between each cookie.
  7. Bake for 20-25 minutes or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely.
  9. Garnish with chopped pistachios or almonds if desired.
