- Add 1 cup of water and bring to a boil. Reduce the heat to low and let it simmer for 15-20 minutes or until the potatoes are cooked.
- Add diced tomatoes and mix well. Let it simmer for another 5-7 minutes or until the tomatoes are soft and the curry has thickened.
- Garnish with chopped coriander and serve hot with roti, rice, or paratha.
